Bramley Apple And Sausage Pasta

Serves four

350g/12oz Bramley apples, peeled, cored and sliced

8 prime pork sausages

2 tbsp olive oil

1 onion, chopped

1 garlic clove, chopped

1 green pepper, deseeded and chopped

1 (400g) can chopped tomatoes with chilli

1 tbsp tomato puree

225g/8oz Penne pasta

Fresh thyme, chopped

GRILL sausages for 12-15 minutes turning occasionally until browned on all sides.

Meanwhile, heat the oil in a large frying pan, add the onion, garlic, Bramleys and pepper and saute for 3-4 minutes. Add the tomatoes, puree and seasoning, cover and simmer for 5 minutes. Add the sausages to the pan, cover and simmer for 5 minutes or until the sausages are tender.

Serve with freshly cooked pasta and garnish with chopped fresh thyme.
