Bonfire Cake (Makes10-12 slices)
SPONGE
175g (7oz) Self-raising flour
175g (7oz) caster sugar
175g (7oz) soft margarine
3 eggs, size 3, beaten
1 orange, grated rind and juice
15ml/1tbsp cocoa powder, sieved
TO FINISH
75g (3oz) butter, softened
225g (9oz) icing sugar, sieved
Red/yellow food colouring
Chocolate orange sticks
HEAT oven to 180C/350F/Gas Mark 4. Grease a 1.2 litre (2 pint) pudding basin. Have ready a baking tray.
Beat together flour, sugar, margarine, eggs and 2 x 15ml spoon (2 tbsp) orange juice and rind until light and fluffy. Spoon half the mixture into the basin. Beat cocoa into remaining half. Add to the basin and stir gently to marble the two cake mixes.
Place on baking tray. Bake for one hour (covering halfway through with foil to prevent over-browning), until firm to the touch and a skewer inserted is clean when removed. Turn out, cool on a wire rack.
Make icing by beating butter with icing sugar and 2 x 15ml spoons (2 tbsp) of orange juice until fluffy. Colour two thirds of icing orange/yellow and one third a deeper red. Spread over the cake to give a flame effect. Decorate with chocolate orange sticks. If you wish, make a Guy from marzipan or fondant icing.
