THE Mediterranean diet is renowned for providing the Italians with good health.
Olive oil and juicy tomatoes are not only delicious, they can help rustle up a quick meal and keep your figure in shape, too.
To celebrate summer leading Italian tomato brand Cirio has teamed up with top Italian chefs to create some delicious recipes which are quick and easy to prepare.
The Cirio range, which comes in tins and jars, includes sweet cherry tomatoes, tomato fillets, chopped tomatoes, peeled plum tomatoes and passata rustica, a dense, grainy sauce to enhance classic Italian dishes such as pasta, pizza and meat or vegetable dishes.
The products can be found in leading supermarkets including Morrisons and Tesco and cost between 37p and 79p.
Here's a light chicken dish which you could accompany with some delicious English new potatoes or some crusty bread to mop up the juices.
Chicken with peppers
Ingredients:
1 small chicken, chopped
200g jar of small pickled onions
2 large red peppers, red or yellow, chopped
I can of Cirio chopped tomatoes
Half a glass of white wine
Olive oil
Salt and pepper
Paprika
Method:
Lightly brown the chopped chicken in olive oil. Add half a glass of white wine and gently simmer for a few minutes until the wine evaporates. Add salt and pepper to taste and cook for 20 minutes, adding half a glass of water during the cooking. Add the chopped peppers and strained onions to the chicken. Season with paprika and add a can of Cirio chopped tomatoes with sauce. Cook for 15 minutes, adding salt and pepper to taste. Serves four.
