Just In Cakes Co bakery opens in Kirkham this weekend

Two former Metropolitan Police detectives are swapping crime scenes for cream cakes as they prepare to open a new bakery and coffee shop in Kirkham this weekend.

Emma Gribben and Taylor Colgan, the owners of Just In Cakes Co Bakery, will open the doors of their first premises at 10B Station Road, Kirkham, on Saturday, June 6, at 10am.

The pair both previously worked as Detective Constables with the Met before moving into corporate management roles in London, Emma as an area manager for Aldi and Taylor as an area manager for Amazon.

Between them, they hold degrees in Law, Criminology and a Masters in Organised Crime.

Emma explained the thinking behind the unusual move: "We both knew corporate life just didn't suit us."

The decision to leave London saw them move back north, staying with Taylor's family while they worked out their next steps.

In May 2025, Emma launched Just In Cakes Co from home, with what began as a hobby quickly growing into a business through markets, postal orders and late nights in the kitchen.

"What started as a few cake orders turned into postal bakes, markets, late nights baking in the kitchen, and Taylor being dragged along to every market stall imaginable," said Emma.

The bakery will serve freshly baked cakes, sweet treats, sourdough bread, pastries, sandwiches and speciality coffee, with the menu changing regularly to give customers something new each week.

Emma said: "We're really looking forward to becoming part of the local community and welcoming customers through the doors."

To start with, it will be just the two of them running the shop as they find their feet, with Emma describing the prospect as "exciting, terrifying and very us."

Just In Cakes Co Bakery opens on Saturday, June 6, at 10am at 10B Station Road, Kirkham, PR4 2AS.
