A brand new bistro has opened in Rossendale and the new owners want it to become a notable local business which serves good food and drink to the community.

The Water Trough, on Burnley Road East, Water, Rossendale, officially opened last weekend.

It serves coffee, cakes, savoury food - and alcohol if you're in need of a tipple. 

Part owner of the business, Ian Henry, said work on the business only began in October.

Ian said: “The Water Trough came about in a bit of a whirlwind from a conversation over a drink, we are now where we are today.

“We started off with the idea of a shabby chic coffee shop. However, we soon realized that what people want and what people need is a bit more class and a nice, relaxing venue to come out to and have a glass of wine instead of it just being a coffee shop.

“It’s evolved into more of a bistro and I think that was the best call for us.”

Constuction and renovations didn’t begin until the start of November and the building has come a long way since then.

Mr Henry said: “The premises used to be the village shop called The Water Village Store.

“We went from an unappealing venue that looked like a shop to what I would describe as something pretty unique that has a lovely atmosphere.”

The bistro is divided into two sections; a more formal restaurant and a more casual area with sofas and chairs.

Currently, they serves a host of simple yet delicious and homecooked dishes such as full English breakfasts, homemade terrines, cooked sandwiches and gourmet burgers.

The future plan is to expand the menu, introducing themed menus on Friday and Saturday nights.

After a “rewarding but challenging” opening evening at the weekend, Ian and his three other business partners are excited about what the coming months will bring.

He said “The interest generated on social media has been ballistic. On opening weekend we were far busier than we could have imagined.

“We have so much more potential to grow.

“We have so many ideas about what food menus we can create and we are really excited about what the future holds – we’re hoping to be around for quite some time.”

The Water Trough is open: Tuesday-Thursday from 8:30am-4:40 pm.

Friday-Saturday from 8:30am-10pm.

Sunday- 9am- 2:30pm.
