A woman who opened a new sandwich shop says post lockdown people should ‘just got for it’ if they have an idea.

The Sandwich Emporium in Redlam, Blackburn, has been launched by Alison Bennett who found herself having to find a new line of work due to the pandemic.

She said: “During the pandemic my line of work suffered so I decided to look for something else. 

“I just realised that life is too short and what have you got to lose if you try something else?

“I always wanted to open a traditional butty shop and I am delighted that we managed to kit this place out so quickly. It took about three weeks and we worked more than 12 hours a day to make sure we were open on time.

“It was really hard work to get up and running but it has been well worth it.

“I would just anyone else thinking of a new venture to just go for it.”

As well as sandwiches the store, which is located near Buncer Lane, offers a range of paninis, jacket potatoes, pies and hot and cold drinks. The store was formerly a convenience store but has been renovated internally and includes seating.

Alison said: “We have really hit the ground running and we have been delighted with all the support from people. The footfall at lunchtime and breakfast has been really good so far.

“We already have people coming in and asking about the meals.

“We are hoping to add homemade jams and honey in the future as it is something I am passionate about.”

The Sandwich Emporium launched on June 7 and is open from 8am until 2pm (3pm Friday) and closed on Sundays.
