AN EAST Lancashire butcher and his team are celebrating after winning a prize at the 2018 World Butchers' Challenge.

Tom Wood, who has an artisan butcher stall in Blackburn Market, captained the team which won best beef product, with Ireland taking the overall prize in Belfast.

Each team of six from across the globe, which featured Jessica Leliuga from Ye Old Sausage Shop in Oswaldtwistle Mills, had just three hours and fifteen minutes to turn a side of beef, a side of pork, a whole lamb and five chickens into a themed display of value-added cuts, similar of what you would expect in a traditional butcher shop or supermarket but with plenty of innovation and skill at the heart of the displays.

The team finished fourth out of 12 and Tom is aiming for the top prize when the competition returns in 2020.

He said: "Last year we won the pork sausage prize and this year we got the beef award but I want the top prize.

"But we're knocking on the door and I was really proud of what we achieved. To come fourth and win a prize was a great effort.

"We'll keep getting better and keep striving to improve as the standard is incredibly high.

"The competition is going to feature 20 teams, rather than 12, and we heard it will either be in America or Brazil so it will be even more difficult."
