WE were on a rather civilised drive out to the country on Bank Holiday Monday when hunger struck.

Luckily round the very next corner appeared, like an oasis in the desert, The Red Pump Inn.

The traditional inn had a lot to live up to — this year it became one of only a handful of pubs in the whole of Lancashire to be listed in the prestigious Michelin Guide.

We quickly found a snug little table-for-two in the corner and ordered.

I opted for the belly pork and my dining companion had the shin o’beef.

Without exaggeration I can say the pork was one of the most delicious things I’ve ever tasted. Ridiculously fatty, but succulently sweet. It was served with a roasted pear, on a bed of crushed potatoes and in a gravy, and I had to stop myself from wolfing it all down in seconds.

The shin o’beef was also deemed a success — but I did notice that he kept eyeing my plate enviously.

Eager to have the full dining experience we agreed to squeeze in a pudding to share and went for a trio of home made ice cream — mint choc chip, chocolate and liquorice.

We'd only ordered liquorice as an experiment, but it turned out to be sublime.

There's much to like about The Red Pump Inn. Try it yourself. It's spectacular.
