PROPOSALS have been unveiled for a new pop-up restaurant in rural Darwen - to support the culinary ambitions of young chefs.
Eat Pennines is behind the three-night venture at The Barlow, in Bolton Road, Edgworth, which will feature the talents of 15 would-be cooks.
Part of the historic venue will be converted into an eaterie from this Friday (3) to Saturday (5), nightly from 5.45 to 10.30pm, with a number of different sittings planned.
Diners will be asked to be in their seats by 6pm and vacate their tables after two hours.
A Barlow spokesman said: “EAT Pennines is a youth training scheme supporting 15 unemployed young people from Bolton into training and employment.
“It is a sister social enterprise to the award-winning Eagle and Child in Ramsbottom.”
Starters on offer will include minestrone soup, pan-fried sardines and ham hock terrine, while the main courses range from traditional Lancashire hotpot to mushroom Wellington or kedgeree.
For those with a sweet tooth, there’s lemon and elderflower possett, caramel sponge pudding and a ‘Pennine’ cheese board.
Customers are being asked to pay what they think the meal is ultimately worth and bookings are already being taken.
The young chefs have also been involved in a French exchange and a community orchard in Manchester.
