Recipe: Dijon Burger

THIS week I have another barbecue recipe, this time using using Maille Dijon mustard.

Over the months I have repeatedly promoted quality ingredients as I believe if you use the best ingredients available and keep the dish simple, you will end up with a really good meal.

This recipe is from Maille who also say that the secret to the perfect dish is using the best ingredients.

And whether you are making salad dressings or creating burgers you have to put the best in to get the best out.

If your budget does not stretch to the best fillet steak ask your butcher for fillet tails as they should be cheaper. Or you could use rump steak.

DIJON BURGER Luxury burger made from delicious chopped fillet steak flavoured with Maille Dijon Originale Mustard and grated onion. Makes 4.

Ingredients

700g/1.5 lbs fillet steak 4 tsp Maille Dijon Originale Mustard 2 tbsp grated onion Salt and freshly ground black pepper.

These burgers are best made hand-chopped for the best texture — but you could use a processor on pulse setting so that the meat is not cut too fine.

If you use a food processor, heat is created and this starts to cook the meat.

Method

Hand chop meat with a heavy sharp knife and place in a bowl. Add the mustard and grated onion then season. Using your hands, shape the meat into four thick rounds. Brush lightly with oil and grill on the barbecue, or griddle in the kitchen.

Serve in buns with salad.

I would also top the burgers with a slice of a good medium Cheddar cheese and a slice of crispy Parma ham and cook some good quality sausages on the barbecue which can be served with a dip made from mayonnaise and Maille Dijon mustard.
